14.5% or 51% … how do we know?

The UN agency’s report on climate change this week (26.9.13) suggests that 14.5% of all green house gases (GHG) are created by our ever increasing appetite for meat.

Whilst others say the amount of GHGs produced by the production and distribution of meat could be as much as 51% (51%.org).

How do we actually determine what figure is right? How do we know what to believe? More importantly how do we know what to do in response?
